Anyone who knows me would be well-aware of my love affair with matcha. It began with me whisking the emerald green powder into a frothy, thick brew every morning, and now, I am on a crusade to matchify every dessert that I love.
It has been a while since I have baked brownies, and between baking, writing and directing the pictures, I forgot to pre-heat the oven so the first batch of brownies I baked came out too fudgy for my liking.
So as a first step, pre-heat your oven to 350°F.
I browned 1/3 cup butter and 1/3 cup white chocolate over high heat until the butter melted, lowering the the heat to low once brown bits started to appear.
Setting the butter + chocolate mixture aside, I combined 2 eggs, 3/4 cup granulated sugar, 1/4 cup brown sugar, 1/2 teaspoon of salt and 1 teaspoon of pure vanilla extract. Fai loves whisking and jumps right into it every chance he gets as he does not want to miss out on an arm workout, so he whisked all ingredients together until a creamy, thick mixture formed. To this mixture, I then added the butter + chocolate mixture I had prepared earlier.
Now, onto my favorite part. I sifted in 2 tablespoons of matcha powder, and whisked until a gorgeous green ganache appeared, taking in its’ aroma.
Note: Use high quality matcha to ensure its’ impeccable aroma, colour, taste and texture, perfect to balance out the sickening sweetness that exists in a lot of desserts.
As the main dry ingredient, I sifted in 1 cup of flour into the bowl and whisked until everything was combined. Lastly, using a spatula, I folded in chocolate chips into the mixture. I was gentle, and did not deflate the batter too much.

The brownies were baked for a total of 30 minutes.
Once 20 minutes were up, I took out the brownies and smacked the pan on my countertop (don’t do this, especially if your countertop is marble) to get rid of the air bubbles. For that bougie taste, you may sprinkle some flaky salt on top before putting them back in the oven to bake for the remaining 10 minutes.
A bit fudgy on the inside, a little cakey on the outside and slightly chewy overall, your brownies are now ready for you to enjoy! However, as hard as it sounds, do not be impatient when your brownies come out of the oven. They need time to set, or else they will fall apart when you slice into it. Letting your brownies cool for 25-30 minutes before serving does the trick!
